The Wholefood Healthy Version Of A Fast Food Favourite

Often before we start on our clean eating journey we have developed ‘favourites’ from unhealthy fast food outlets that we may find hard to say goodbye to.  So why not ‘clean up’ the recipe and create a healthier, wholefood version of the same thing?!

That’s exactly what My Wholefood Life did with this Pumpkin Choc Chip muffin recipe (a favourite from Dunkin Donut).  And perfectly timed as we approach the season of abundant pumpkins!!

Pumpkins are such an amazing food – who doesn’t love roasted pumpkin…in anything, or just on it’s own.  It is a great addition to many desserts and baked goods too.  For more pumpkin dessert inspiration, check out this amazing Raw Pumpkin Pie.

Did you know that pumpkins are in fact a fruit (they contain seeds)?  The name pumpkin comes from the Greek word ‘pepon’, meaning ‘large melon’.  They have loads of health benefits too.  As with all other orange and yellow fruits and vegetables pumpkins are high beta-carotene and Vitamin A which improves and protects eye health.  Their wonderful vitamin and antioxidant profile also helps improve immunity, reduce inflammation, prevent premature skin aging and protect reproductive health.

They are also high in iron and loaded with fiber making it the perfect food for nourishing expectant moms.  Combined with this delicious muffin recipe – this could be the best pregnancy and breast-feeding snack!
